Flourless Double Chocolate Brownies
These brownies are so yummy! The whole family gobbled them up. No Flour is used in this recipe and no excess sugar. They are very fudgy and rich, but not too rich. Here's the recipe from the cookbook 'Everyday Detox' by Megan Gilmore.
1/2 cup cocoa powder1/2 cup coconut flour
1/3 tsp sea salt
1 cup maple syrup
1/2 cup melted coconut oil
4 eggs, room temperature
1 tsp vanilla extract
1 cup dark chocolate chips
1. Preheat the oven to 350ºF and line a 9-inch backing dish with parchment paper.
2. In a large bowl, whisk together the cocoa powder, coconut flour, and salt to break up any clumps, then add the maple syrup, melted coconut oil, eggs and vanilla. Whisk well to create a smooth and uniform batter and then stir in the chocolate chips.
3. Pour the batter into the prepared baking dish and smooth the top with a spatula. Place the dish in the preheated oven to bake for 30 to 35 minutes, until the center is firm.
4. Allow the brownies to cool completely before cutting and serving as they are more fragile when fresh from the oven. Store in an airtight container to prevent them from drying out.
